Roasted vegetables

 So good I had to have seconds and maybe even thirds…

One thing that is extremely easy to make and is incredibly delicious is roasted vegetables. It tastes so fresh and takes no time a part from the time in the oven.

We usually throw in some courgettes, carrots, peppers, red onion, broccoli, mushrooms and sometimes aubergine. Some other things that are really good are cauliflower, butternut squash, sweet potatoes and other root vegetables (although I find that slightly more autumny). 

Throw on some pepper, salt, squeeze of lemon and finally a slosh of olive oil.  We put it in our fan oven at about 190 degrees for about 25 minutes (depending on how much veg you’ve got). Prefer it when they’re still slightly crunchy but it depends on what you like 🙂 

Serve it with some tasty hummus or feta cheese or both :p Have it with chicken or some nice fresh fish or just on it’s own and enjoy!
