With Jamie working as a bartender I do end up eating a lot of dinners alone at times. Let’s face it, cooking your meal on you own for one is not as fun, which is why I stick to easy and quick meals (vegan food is amazing for this). Yesterday’s dinner was sweet potato wedges seasoned with salt and paprika and drizzled with a bit of olive oil, a bit of cod and a salad. Of course hummus was served with it as well. The fish was found in the freezer and as we are trying to empty our cupboards a bit for the move I thought I could have it. Saved some to have in my lunch box for work today.
Don’t get me wrong though, I try and cook a large bath of a dish sometimes so I can have it for several meals. Makes life a bit easier 🙂
