Dinner the other night

I follow fitness blogger, Ida Warg’s blog and have been doing so for a while. She is an amazing inspiration and posts very easy and quick recipes for healthy meals. One recipe she posted the other day I just had to try. It was a watermelon, mozzarella and tomato salad. It was heavenly!

You can find the recipe here. We did it slightly differently by using spinach instead of salad leaves. It is definitely one of my new favourite salads. We served it with sauteed haddock with lots of lemon and a bit of salt and pepper. It was incredibly nice and fresh, a perfect summer meal.

I actually made this recipe tonight again and had it is a main dish with grilled haloumi on the side as we did not have any mozzarella left. It was just as good and the savouriness of the haloumi was amazing with the sweetness of the watermelon and tomato.

A huge bonus with this meal is that it is incredibly quick to prepare, which makes it even more perfect to throw together on a busy weekday night or to enjoy in the sun on a nice relaxed day. Just any occasion really because it is so delicious that you will want to eat it everyday!!
