I usually make nicer looking omelettes than this one…

Hello my dears!

I’m off work today and started it off with a trip to the gym. My body was quite sore from the previous two days but I powered through and it felt great! Being away from the gym for a longer period of time does really show when you get back. I’m not feeling quite as strong as before but I’ll regain it soon enough 🙂 That’s the good thing when you are exercising regularly. It doesn’t take that long to get back into it when you’ve been away on holiday.

Another reason to get your bum to the gym more regularly!

I focused on the core. I wanted to do something a bit different so I took a couple of exercises from these two workouts from Toneitup.com and Emily Skye. Other than that I did other exercises for the core that I enjoy. I wish I had someone who could take photos for you of what I get up to but as it is at the moment I don’t…

Hopefully in the future I will be able to somehow!

This afternoon I’ve spent sorting out some less fun things but that are definitely necessary. I haven’t changed my address with my banks so that needed to be sorted out amongst other things. It is such a relief having it done finally! Pat on the back for me.

I have been craving a delicious French omelette since we booked our flights to Nice. So therefore, I cooked myself an omelette for lunch. I make my omelette with two eggs stirred with a bit of Himalayan Pink Salt and freshly ground pepper.

For filling I had a bit of cheese, sprinkled it with Herbes de Provence and served it with a salad on the side and oh my! Sooo good. A really easy, quick and healthy lunch and it is all made with things you can find in your fridge.

There are of course tonnes of other things you can have in your omelette such as:

  • tomatoes
  • spinach
  • ham
  • goats cheese (have not tried this myself yet but really want to).
  • peppers (red, green or orange, whatever you prefer).
  • cooked turkey or chicken could probably work as well

In just over three weeks I’ll be sitting at a French brasserie eating my freshly made omelette or moules frites or chèvre chaud salad. Have I mentioned that I’m a bit food obsessed? 😛
