Jamie and I tried a new recipe the other day. I was so excited because I’ve been wanting to try for quite a while but haven’t had a spiraliser until recently. It’s by one of my favourite health blogger Madeleine Shaw. I have her book Get the Glow and absolutely love it! I would truly recommend it to anyone. She regularly posts recipes up on her amazing blog and this is one of them, Thai Coconut Prawn Soup with Courgetti (click here to get to the recipe).
One thing that already sold this recipe to us was how quick it was to cook. A definite plus when you’ve been at work or university all day and just want something quick but healthy to eat. We didn’t really expect to love this soup as much as we did, we thought it would be tasty but it was just heavenly. I loved the flavours and it is perfect for when you’re craving Thai food (which I do quite a lot hehe).
The courgetti worked like a replacement for noodles almost and it was delicious. A perfect soup for this time of year when it’s getting colder and you’re craving comfort food.
We’ll be making this again very soon! I really want to try putting in some yellow or red peppers, mushrooms and broccoli in next time. I love broccoli in Thai food since it absorbs all the sauce and becomes a burst of flavour when you bite into it. Yum!
A tip is to spend a bit more on your green curry paste. I once bought a cheaper version when I made a different curry and it tasted horrible… It does make a difference 🙂
