This week is going by at lightning speed and I can’t believe Wednesday has already passed pretty much! The other day I had something incredibly delicious that I really want to share with you. I’ve become a bit obsessed with chia pudding. It’s so easy to make and convenient to take with me to work and lectures as a snack. It’s a great dairy-free option and has become my replacement for yoghurt. Yoghurt sometimes made my stomach feel a bit odd so I’m glad I’ve discovered chia. I make mine with approximately two tablespoons of chia and just under 150 ml of unsweetened organic almond milk.
Lately, I’ve been experimenting a bit with toppings. Before I used to top it off with whatever fruit I had lying around and it didn’t always turn out the best. The other day I had the idea of topping it with some mango, cashews and unsweetened coconut shavings. It was a match made in heaven! When the mango is extremely juicy, sweet and ripe, this turns into delicious creaminess with a bit of texture added from the cashews och coconut shreds. It’s like a delicious mango pudding. Yum!
Today I had a bit of apple lying in the fridge that I decided to add to my chia pudding bowl, and it tasted really nice as well 🙂 I think I preferred it without the apple but it worked.
