Friday and I’m so happy that it’s time for the weekend. I’m completely exhausted after this week! It’s been intense with interviews for my dissertation, transcribing interviews, dissertation writing, studying for other subjects, going to lectures, working and going to the gym. Tonight Jamie and I are going out for an early Valentine’s celebration since he’s working Sunday evening. We’re going for Italian! I can’t even remember the last time we went out for Italian so I hope it will be good 🙂
Today started my day with this amazing bowl of porridge as always. I cooked the oats with a good dash of cardamom and some pink himalayan salt. Today’s toppings were half a banana, blueberries, raspberries, unsweetened shredded coconut, cashews, walnuts and almond butter. Of course served with organic oat milk (so much better than almond milk!). Yum! This is the reason I love getting up in the mornings and the best reward after a gym session. Yes I might sound crazy, but porridge is definitely one of my favourite meals ever!
