Girls night

I’m so sorry guys! I was going to bring my camera but completely forgot last minute so the quality is not the best. Next time I’ll remember.

Hi my dears! Today I started off my day with a very exciting meeting in town and I’m really excited for the future. I have a feeling this could lead to very cool things so stay tuned!

Yesterday evening Emma, Kamila and I were invited over to Marija’s for dinner. I love despite how busy everyone is we really make an effort to see each other every week. Marija had cooked up a delicious Malaysian inspired veggie curry with a lovely relish and toasted cashews. Yum! This is my type of meal. Any type of Asian food has got to be my favourite kind of food and it’s so easy to make it healthy too. You can pack so much nutritious veg into it.

It’s funny how nearly all of us almost eat entirely vegetarian or vegan these days so it’s fun to share recipes with each other and be inspired. It definitely helps when you’re cooking lots to be inspired by others so you don’t always cook the same things over and over again. I’m one of those people that if I have a favourite dish, favourite song, favourite anything really I make it so many times or play that song on repeat until I get tired of it. It’s good to break the pattern sometimes!

For dessert Marija had made a nice cream (blended frozen bananas, can’t get much easier than that!) served with cacao, dates and sunflower seeds on top. Yum! I so easily bloat and get sore stomachs but after this meal my body felt great.

It was lovely seeing the girls and talk about life and things we are up to. They give me such energy and support always. I get so inspired by them. It’s so important to surround yourself with great people and these girls sure are keepers.

Now it’s time for me to spend some time with Jamie. He’s been in Edinburgh since Monday working a couple of events and he’s finally back. He came back about 5.30am this morning and think I just heard him wake up so can’t wait to hear how he’s been ❤
