Belated birthday brunch

Food is served

This time a week ago we had this lovely bunch (and some more who managed to sneak out of my very few photos) over for brunch at ours. I thought my 25th birthday was a great excuse to have some of our friends over for some tasty food and brunch is the best meal of the day, let’s be honest. We didn’t realise how full our little flat would get. I’ve always thought we had loads of space but when everyone decided the kitchen was the place to hang out it all of a sudden got quite cramped haha. Plus we had two cute dogs running about!

Jamie and I had spent the morning cleaning the flat and then cooking lots of plant-based deliciousness for everyone. Or at least we hope it would be delicious. Unfortunately we ran a bit behind schedule and were still cooking when everyone was arriving. I don’t think anyone minded though. Some of the things we made were vegan banana pancakes, homemade baked beans, homemade hummus, a kale and butternut squash salad, sautéed mushrooms, sweet potato wedges and I also baked banana bread (recipe here). We then had lots of avocado, fruit, berries bread from Kember & Jones, Almighty Foods Hazelnut Fuj and peanut butter. I think that was it…

We received lots of kind comments about the food and some even saying we should be selling it somewhere. This made me so incredibly happy as one of my dreams for when I get older and want to settle down is to have a healthy café together with Jamie that serves healthy but super exciting and delicious food.

I loved having everyone over but it went by far too quickly! I wish I could’ve cloned myself so I would’ve had more time to speak to everyone who had taken the time out of their day for this little celebration. I love putting people together who perhaps otherwise maybe wouldn’t have met. It was amazing seeing everyone connecting.

Jamie and I were absolutely exhausted after that fun and busy day. It was one of the days when I wished we had a dishwasher! Let’s say tidying up took a little while but it was all worth it and I can’t wait until we next have friends over. It’s actually happening tonight as I’m having Kajsa and Ellie over for dinner. I just need to figure out what I’m going to cook. I’m feeling something warm and hearty considering how chilly it is outside!
